The talk focuses on the presentation of the volume "Coffee & Food Pairing", which redefines the role of coffee in gastronomy.

The author illustrates an innovative investigation into the sensory dialogue between coffee and food, surpassing the traditional conception of the beverage as a mere accompaniment.

The heart of the presentation is the Coffeat method: an original and rigorous analytical model, based on concordance, contrast, and emphasis.

It will be explained how Coffeat allows for defining the optimal sensory interaction between each gastronomic preparation and its ideal coffee, analyzing key variables (extraction, temperature, aromatic profile) to elevate coffee to the protagonist of the taste experience.
