Green Pastry: Implementing Sustainable Practices for Pastry Labs

Vision Plaza - Cagnoni Dome - South Hall

Focus on the responsibility of artisans producing desserts and the focal points on product transformation. Presentation of data from the Relais Desserts Masters on sustainability, the expert Marie Loones consultant of the Relais Desserts association will talk about the research done in France on the environmental impact of pastry production.

Can we differentiate better? What can we do to minimise waste? E.g.: pellet oven, recovery and recycling, lots of small, easy-to-apply precautions.
