The phenomenon of artisanal chains is a fairly recent one, but one that has definitely taken off to establish itself as a fast-growing reality. Until not so long ago, when people spoke of chains, they were essentially referring to a few big brands that made service their strong point, rather than quality, and did not respect the concept of craftsmanship of the product. Now, on the other hand, several important names in the pizza universe, such as those featured in this talk, have decided to invest in this sense, studying the not easy concept of replicability. This is the focus around which the guests will discuss, explaining problems and solutions of this new business concept
