The SusPlantIC project represents a revolutionary approach to artisan gelato, integrating artificial intelligence, sustainability, and technological innovation. The project aims to develop an advanced production system that leverages the potential of artificial intelligence and the Internet of Things (IoT) for predictive monitoring of the churning process. This approach will allow for the precise design of the desired gelato quality, supporting artisan creativity and enabling rapid prototyping of new recipes, with the possibility of developing personalized diets. The talk will explore the potential of this advanced production system in the development of plant-based gelato, low glycemic load, and beneficial properties for the gut microbiota suitable for healthy individuals or targeted at vulnerable subjects (those with neuromotor or post-traumatic dysphagia, individuals with reduced sensory capacity from COVID-19), with a focus on practical applications and future prospects for the artisan gelato sector
