Pier Daniele Seu

Born in 1987, Pier Daniele fell in love with pizza and began studying its techniques as a self-taught at the age of 23.
He started with Roman pizzas and then worked in several pizzerias in the capital where he eventually attracted the attention of food and wine journalists, as well as winning a wide audience.
In 2017 he began running Bottega della Pizza at Mercato Centrale Roma where he will remain until 2022.
In 2018 he founded together with his wife Valeria Zuppardo the company that finally opened “Seu Pizza Illuminati” developing a highly innovative vision of pizza.
With Seu Pizza Illuminati, Pier Daniele and Valeria altered the traditional codes of the pizzeria respecting the pizza content to the point of exasperation, but changing the context: in their pizzeria they began to offer excellent pizza in an elegant atmosphere with attention to detail, proposing a reasoned and level-headed wine list without ever losing the focus on the doughs and the quality of the toppings.
In January 2024 Pier, Daniele and Valeria opened their second pizzeria in Mostacciano: Tac - Thin & crunchy - their second brand of Roman pizza.

Seu Illuminati pizza has received many prestigious awards since its opening and is featured in the most important international guides and press. It is the 5th pizzeria in Italy and 10th in the world for 50 Top Pizza. Pier Daniele Seu won the pizzaiolo of the year award in 2019 for 50 Top Pizza and received the Vegan Pizza of the year award in the same year.
