Pastry chef of the year 2018-2019 for AMPI

Santi Palazzolo inherited the family confectionery from his father and grandfather: the store was opened in 1920, one hundred years ago, in Cinisi, a small town near Palermo. With tenacity, constant commitment and great passion, he succeeded in making his products known outside of Sicily. Joining AMPI is for him the best way to keep updated. In addition to the Cinisi pastry shop, he opened the well-known showroom in Palermo airport, three bistros in Rouen in Normandy, an important pastry and ice cream shop in Fi.CO Eataly World in Bologna. Last but not least,  a large Pastry Lab was opened in 2017, a place where the artisanal work  combines with a strategic vision of spaces and production processes. Appointed Pastry chef of the year 2018-2019 for AMPI (Italian Academy of Pastry Chefs), thanks to his charisma and high ideals, Santi managed to create a company rich in history, strongly anchored in his land of Sicily, but constantly projected towards a future full of challenges to be won.
