THE ENTIRE DOLCE FOODSERVICE FUTURE IN THE INNOVATION DISTRICT AT SIGEP 2024

Rimini, 4th January 2024 . The theme of innovation is central to the 45th edition of Sigep - The Dolce World Expo organised by Italian Exhibition Group from 20th to 24th January 2024 at Rimini Expo Centre.

Sigep 2024 has opted for a programme centred on future trends and scenarios so much so that they will occupy an entire exhibition area in the South Hall. The Innovation District will, in fact, feature new entries and ideas capable of innovating and making the dolce foodservice sector increasingly competitive.
The Innovation District will have three threads offering professional debates, new trends, innovative companies and digital revolutions: Vision Plaza, the Start-up Area and the Innovation Award.

VISION PLAZA

Dolce foodservice experts will be back on the Vision Plaza stage with professional discussions and talks to understand the challenges facing the industry and identify future opportunities for growth and development including a perspective of the main global trends and out-of-home consumption behaviour with a focus on developments in various countries. Digital and sustainability will be at the centre of several debates on issues that are revolutionising the dolce foodservice industry and dictating the agenda for sector companies to make strategic decisions.

 TALKS ON MARKET SCENARIOS IN ITALY AND EUROPE

Circana, leader in market research and consumer behaviour analysis, will be entrusted with conducting two talks focusing on Italy and Europe. In fact, the needs of the consumer of the future will be the subject of the conference entitled ´Sweet and savoury: challenges and opportunities for the dolce foodservice in the Italy of tomorrow´, while the talk ´Out of home consumption in Europe: opportunities and future prospects´ will analyse the opportunities and scenarios of eating out with a European outlook with the participation of Jochen Pinsker, Vice President of Foodservice Europe.

Another in-depth look at the future of the dolce foodservice will be offered by Bargiornale´s talk on innovation in the food industry with a focus on new, high-functioning ingredients, new ways of managing supply relations and developing revolutionary production methods.

Lastly, representatives from the Marcas de restauraciòn association, which represents the main catering brands in Spain, will be on the Vision Plaza stage to discuss the importance of catering brands.

 TALKS ON ARTIFICIAL INTELLIGENCE, DIGITALISATION AND SUSTAINABILITY

The main topics addressed in the Vision Plaza will also pay great attention to Artificial Intelligence, a hot topic of the moment that is also affecting the dolce foodservice sector and to which Cast Alimenti will be dedicating the talk entitled ´The Future Today: Artificial Intelligence Made in Cast at the Service of Intelligence in the Hands of Culinary Professions´.
The challenges of digitalisation and future entrepreneurship, particularly linked to the Bakery and Gelato worlds, will be addressed by FIPE-Italian Federation of Public Establishments, offering interesting food for thought in two talks entitled ´Innovation and Digitalisation in Bakeries and Gelato Parlours´ and ´Changing Perspective: from gelato maker to entrepreneur´.

Another current topic will be at the centre of the ´Communicating the excellence of raw materials and practising sustainability´ debate organised by Dolcesalato, which will deal with the meaning of an overused word such as sustainability, analysing its objectives and relaunching its practical aspects.

Big calibre names, such as Iginio Massari, will be ready to bring creativity and the future to the stage in the debate ´Different visions great ideas´ in collaboration with APEI-Italian Pastry Chef Ambassadors. He will also be the protagonist of another talk on augmented reality applied to pastry: ´Real pastry versus virtual pastry´.


 TALKS WITH FOCUS ON SIGEP´S SUPPLY CHAINS

New to this edition´s programme of talks regarding individual sectors, in cooperation with Trade Lab, FIPPA-Italian Federation of Bakers and Pastry Chefs will be presenting an analysis of the current state of bakery and pastry making in Southern Europe.
´Looking beyond´, on the other hand, will be the title of the conference by AMPI . Academy of Italian Master Pastry Chefs, which, together with experts from the pastry sector, will speak about food, nutrition, market analysis and communication.
With yet another focus on pastry, CEOPPAN, the Spanish Confederation of Bakeries, Pastry and Related Products, will bring to the stage a talk on the latest developments in artisan pastry in Europe, from production to packaging.
Some of the supply chains represented at Sigep will be featuring in the research ´Bread, pizza and pastry: new consumption and trends´ presented by AIBI the Italian Bakery Ingredients Association, a member of ASSITOL, in collaboration with Format Research.
The fascinating coffee sector will be explored under the magnifying glass of Comunicaffè, which will analyse the possible scenarios, while the Slow Food Coffee Coalition will address the promotion of coffee cultivation and producer communities to create consumer awareness.
The last day of Sigep 2024 will also see a presentation by Il Camaleonte, the 2024 guide that will map Italy´s coffee roasting plants.
START-UP AREA

Set up around the Vision Plaza, the Start-Up area, created from the partnership between Italian Exhibition Group and ANGI - National Association of Young Innovators and with the collaboration with ITA . the Agency that promotes the business development and internationalisation of Italian companies abroad, is the showcase of innovative companies offering technologies, services and solutions in the dolce foodservice sectors.
The project aims to establish professional meetings and share ideas with companies of different sizes that want to strengthen their competitiveness and create new business opportunities through innovation.

INNOVATION AWARD

Set up thanks to collaboration with ANGI, the National Association of Young Innovators, the Innovation Award will offer exhibiting companies the chance to highlight their special features and distinctive values by entering one of the five categories: Innovative Product, Sustainability, Digital Innovation, Organic/Free From, Packaging.
