Guide to the Italian Coffee Roasters: here is who pays for coffee

Sustainability District - Hall B1

Coffee is a very complex supply chain involving dozens of operators. The Guide to the Italian Coffee Roasters project analyses the most critical links in the chain, namely the farmers in the plantation and the bar sector. These two players, currently crushed by the rest of the chain and by a coffee price that is impossible to sustain, see in the virtuous examples of block chain tracking, on one hand, and specialty product valorisation, on the other, a lifeline. The editors of the Guide, Godina and Illiano, will try to understand what the possible escape routes to a more conscious consumption and a more sustainable price of coffee are, essential elements for a more professional figure of the modern barista.
