The future of panettone: deseasonalisation and innovation

Panettone, the traditional Italian Christmas cake, has conquered the palate all over the world, becoming a globalised and deseasonalised product, now consumed all year round. This phenomenon has led to a growing international demand, particularly in emerging markets, stimulating the industry and artisans to innovate and meet the demands of increasingly demanding consumers.

 

 

Discussing the future of panettone was Maestro Giuseppe Piffaretti, creator of the Panettone World Cup, during the SIGEP WORLD event in Rimini. Piffaretti talked with leading international master pastry chefs, including Christophe Louie (France), Jose Romero Barranco (Spain), Andrea Besuschio (Italy), Jimmy Griffin (Ireland) and Yahei Suzuki (Japan). The Panettone World Cup will start again with the national selections, with the final scheduled to take place in Milan in November 2026.

 

At SIGEP WORLD pastry chefs are engaged in exciting competitions in the categories of traditional panettone, chocolate panettone and, for the first time, panettone with ice cream. The event is a unique opportunity to explore the latest trends and innovation in a sector that, although rooted in tradition, is increasingly looking to the future.
